Melting Moments



















When this lovely lady married one of those handsome scottish boys and moved across the pond to join us other australian kids over here in scotland, another lovely lady put together a cook book for her and asked me to participate. I was pretty excited and I knew exactly what i was going to share . . .

Melting Moments

1/2 cup Butter
2 tablespoons of Icing Sugar
Vanilla to taste 
1/2 S R Flour 
1/2 Cornflour

Icing 
2 tablespoons of butter 
2 tablespoons of condensed milk
3 tablespoons icing sugar
Vanilla to taste 

Method 
1. Cream butter and sugar and vanilla.
2. Sift flour and cornflour.
3. Add to creamed mixture and mix well. 
4. Roll into small balls. 
5. place on greased flat pan and squash slightly with a fork.
6. bake in slow oven 150 to 160 degrees for 10 - 15 mins 
7. mix all icing ingredients together. 
8. join biscuits together with icing when cold.
9. carefull they will be fragile!!

These remind me of home.

Chocolate Banana Muffins

I like banana john likes chocolate so we made these yesterday. Its a fairly foolproof recipe you can swap banana  for brambles or pears and dark chocolate for white chocolate or walnuts. I like them warm straight out the oven. but in order to get john to eat his bananas we put icing on them and have them with a cup of tea.


Choc banana muffins turned cupcakes.
125 g unsalted butter, at room temperature.
250g caster sugar.
2 eggs.
1 tsp vanilla extract.
250g plain flour
2 tsp baking powder
4 bananas mashed
175g of dark chocolate
(its best to use the good stuff for this
recipe we like green and blacks trust me you'll taste the difference)  

pre heat your oven to 160 degrees

cream your butter and sugar, it will take about 3 mins with an electric mixer and you will notice it going pale thats what you want.

add your eggs and vanilla and continue beating, sift in your flour and baking powder and beat briefly until all combined.

mash up your bananas and roughly cut  the chocolate into small bitts, then add them to your mixture with a wooden spoon.

spoon the mixture into your muffin cases and bake for 25 mins.

Icing.
(i have never used an icing recipe - its so easy for chocolate icing you'll need)
soft butter
tiny amount of milk
icing sugar
cocoa
put it all together and mix until a good consistency.
